Production|2.000 bottles individually numbered and only produced in the best vintages.
Grape varieties|Corvina, Corvinone, Rondinella, Oseleta and Croatina, only own grapes, hand selected from Cru Monte La Parte.
Soil type|calcareous, tuffeau
Vinification|The fully matured grapes are selected and harvested in small crates of 4/5 kg.
The grapes are then left in fruttaio (drying room) for over four months resulting of a weight loss up to 50%.
The vinification is carried out in stainless steel tank with daily “remontage”.
The spontaneous fermentation can last up to three months and is stopped naturally.
Aging| The wine is refined in 5hl French oak barrels for at least 3 years and bottled without filtration.
Spend and extra year in bottle before being released.
Food pairings|Full bodied sweet wine.
Perfect match to pastries (cantucci, sbrisolona) or Panettone.
Could also accompany Blue cheese or bittersweet chocolate.
Often referred as meditation wine.
Wine tasting Colour|Red ruby colour with violet reflections.
Bouquet|Nose reveals notes of ripe fruit such as black cherry, raspberry and plum, with hints of spices. Palate|Full-bodied, round and elegant sweetness. Good balance between acidity and tannins.
An ever presence of Morello cherries in every taste culminate in a dense, fruity and persistent finale.
